Lunch at Léman - Banana Oatmeal Pancakes

One of the most popular days in the café at Léman is "breakfast for lunch" day and students go wild for these banana, oatmeal pancakes. We hope you enjoy this delicious and healthy meal with your family the next time you're making breakfast, or breakfast for lunch! 

Banana Oatmeal Pancakes

Ingredients:
1 cup oat flour
¾ cup all-purpose flour
½ cup whole wheat flour
1 ½ tablespoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 tablespoons brown sugar or honey
2 cups whole milk
2 very ripe bananas, well mashed
2 large eggs
2 tablespoons vegetable oil
1 teaspoon pure vanilla extract

Procedure:
In a medium bowl combine all of the dry ingredients and whisk to combine. In a separate bowl combine all of the wet ingredients and whisk to combine. Add the wet ingredients to the dry and whisk just until well combined. Add a splash or two of milk if you feel the batter is too thick. Lightly grease a skillet on medium heat with vegetable oil or butter. Pour about 2 oz or ¼ cup of batter per pancake. Make as many as you can fit in your skillet without them touching. After about 2-3 minutes or when bubbles start to form, flip and cook another few minutes. If pancakes are getting too dark too soon, lower the heat. Serve hot from the skillet with the toppings of your choice. Fresh fruit and a bit of pure maple syrup are my personal favorites! Makes about 16 medium size pancakes.
